Active Summer Smoothie Recipe

1. 1 ½ cups old fashioned oats
2. 1 cup walnuts, finely chopped
3. 1 tablespoon sesame seeds
4. 5 tablespoons coconut oil, melted
5. ¼ cup honey
6. 1 teaspoon vanilla extract
7. ½ teaspoon cinnamon, ground
8. 2 cups greek yogurt, coconut yogurt, or almond yogurt
9. 4 cups mixed fruit, for topping, (strawberries, raspberries, blueberries, apple

• Pre-heat oven to 325°F.
• Mix the oats, nuts, seeds, melted oil, honey, vanilla, and cinnamon together in a bowl until thoroughly coated.
• Press about 3 tablespoons of the mixture into 8 greased mini tart pans. Use the back of an oiled spoon to help press the granola evenly across the pan and up the sides.
• Bake in the center rack of the oven for about 15 to 17 minutes, or until golden.
• Immediately after removing the tart shells from the oven, use the back of the spoon to press down the centers of the crust to create more of an indentation, and push up the sides. The shell puffs up in the oven, so it helps to reshape the crust after it bakes while still hot.
• Allow them to completely cool in the pan before removing.
• Use a small knife to gently release the sides of the crust, working around each side. Carefully remove them from the pan, turning over if needed into your hand. The crust should be crisp on the sides and hold together, but they will be very delicate.
• Fill each tart with 3 to 4 tablespoons yogurt and smooth it out evenly.
• Arrange the fruit on top and serve immediately. The crust will become soggy if left to sit for too long.

Coffee Smoothie Recipe

Ingredients

These are the ingredients that you will need to follow our delicious coffee smoothie recipe:

1. Milk of choice. I used oat milk, but you can use any milk.
2. Banana. The riper the better for natural sweetness. And for an extra creamy texture, it's best to use a frozen banana.
3. Coffee. I used cold-brewed but you can use whatever coffee you like and prefer. Just make sure it's chilled.
4. Oats. They are packed with fibers and make the smoothie more filling, balanced, extra thick, and creamy. I used rolled oats here, but quick oats are also good here.
5. Cacao powder. I always use unprocessed raw cacao powder that is bitter.
6. Hemp seeds. They are an excellent source of heart-healthy Omega-3 and proteins. A great addition to smoothies, making them more nutritious.
7. Vanilla. For extra flavor and deliciousness.

How to make your coffee smoothie

Follow these easy steps to our coffee smoothie recipe.

• Start with preparing and measuring all the ingredients. I like to use measuring cups.
• Take the blender and add all ingredients. Note: add wet ingredients first for easier blending. Also, add ice cubes, if using.
• Mix everything at high speed until you get a smooth silky texture.
• If the smoothie is too thick, add a little more liquid – milk or coffee. Blend again until everything is well combined.
• Taste the smoothie and add additional sweetener if the smoothie is not sweet enough to your taste. (See "Recipe tips" section for sweetener recommendations)
• Transfer the smoothie into a smoothie glass.
• ADD TOPPINGS: I used chopped dark chocolate, oats, and cacao powder. Be creative here and add toppings you like.
• Serve and enjoy!
• Makes 1 serving that serves 1 person as a full meal or 2 servings as a snack.

1. Whole eggs
2. Milk or heavy cream
3. Frozen hash browns
4. Spicy sausage (we use ground breakfast sausage)
5. White onion chopped
6. Cheddar cheese -sharp
7. Salt & black pepper to taste
8. Additional cheese sausage & parsley for garnish (optional)

• Step 1. Preheat oven to 350 and spray a mini muffin tin with nonstick cooking spray.
• Step 2. Brown sausage on stovetop over medium heat
• Step 3. Set the sausage aside and use the small amount of grease still left in the pan to sauté the chopped onions.
• Step 4. Divide the hash browns equally into each section of the muffin tin.
• Step 5. Add the eggs, milk, cooked sausage, onions and cheddar cheese in a large bowl.
• Step 6. Add a little salt and black pepper, then mix the ingredients and pour egg mixture over the hash browns already in muffin tins.
• Step 7. Cook on the middle rack at 350 for 20 minutes. If you have any cheese or sausage left over, sprinkle a little more on top.

1. 5 eggs
2. ½ cup shredded cheddar cheese
3. 1 cup fresh spinach
4. 2 medium tortilla wraps
5. salsa or diced tomatoes

• Scramble the eggs over medium heat until cooked through.
• Warm the tortillas in the microwave for 10 seconds so they are pliable. Fill with half the egg, cheddar, and torn spinach leaves. Drizzle with salsa or chopped tomatoes.
• Roll the tortilla tightly, tucking in the ends as you go.

1. 1 cup frozen pineapple
2. 1 banana
3. ¼ cup coconut water
4. 1 Tbsp. honey, plus additional for serving
5. ¼ peach, thinly sliced
6. ½ cup blackberries
7. 2 Tbsp. sunflower seeds
8. ¼ cup puffed rice cereal, such as Rice Krispies

Blend the pineapple, banana, coconut water, and 1 tablespoon of the honey until smooth. Transfer to a bowl and top with the peach, blackberries, sunflower seeds, rice cereal, and a drizzle of honey.

1. 3 tangerines or 2 small oranges – peeled
2. 1 small lemon, peel cut away
3. 1 inch of ginger peeled and thinly sliced
4. 1/2 teaspoon dried turmeric, or 1/2 inch piece of peeled fresh turmeric
5. Honey, to taste
6. 1 1/2 cups water

• Peel the tangerines or oranges, and cut the peel away from the lemon and lime. If you’re using a high speed blender like a Vitamix all the fruit can be kept whole. Otherwise, you may want to cut it into smaller pieces.
• Peel and thinly slice the ginger, and gather the other ingredients.
• Add all ingredients to a blender. Blend on high until smooth and no pieces of fruit or ginger remain.
• Serve immediately or move to the refrigerator to store until ready to enjoy. Shake before pouring!

1. 4 tablespoon Chia Seeds
2. 1.25 cups Milk plus more to taste. Also see recipe notes
3. Sugar optional

• In a small bowl, add the chia seeds and pour the milk.
• Mix well with a fork. Place it in the refrigerator for at least 15-20 minutes. I mix the chia seeds with milk at night and use the soaked seeds in the morning.
• Once the chia seeds are soaked, add sugar and extra milk according to your taste.
• Transfer the contents to two serving bowls, top with sliced (seasonal) fruits and nuts.

Feel free to use seasonal fruits and nuts of your choice.

• Apple Slices
• Banana slices
• Blueberries
• Peach Slices
• Sliced Almonds
• Raisins
• Mint leaves

1. 1/4 cup old fashioned oats
2. 2 tablespoons creamy peanut butter
3. 1 whole banana
4. 1/2 cup soy milk
5. 1 tsp chia seeds, optional if desired

• Add all of the ingredients to a blender.
• Blend for 30 seconds or until the smoothie is creamy and lump free.
• Pour into a glass and garnish with banana slices and oats if desired. Serve immediately or place in the refrigerator until ready to eat.

1. 4 cups whole milk
2. 1 vanilla bean, sliced in half, seeds scraped
3. ½ cup malted milk powder
4. 2 Tbsp brown sugar
5. 2 Tbsp honey
6. ¼ tsp ground cinnamon

• Place the milk and vanilla bean seeds in a small saucepan and bring to a boil over medium heat.
• Remove the pan from the heat and stir in the remaining ingredients. Mix until the sugar has dissolved completely.
• Pour half of the warm malted milk into a blender and puree for about two minutes. This will froth the milk and make it nice and light.
• Pour the rest of the malted milk into four mugs. Top with the blended milk and sprinkle with a little cinnamon. Serve warm.

1. 1 cup frozen strawberries (or other frozen berries)
2. 1 cup frozen mango (or frozen pineapple or peaches)
3. 1 banana, room temperature
4. ½ cup Greek yogurt
5. 1 cup milk
6. 1 tablespoon fresh lemon juice

Place all ingredients in a blender, breaking the banana into pieces. Blend until creamy and frothy, stopping and scraping down the sides as necessary. Serve immediately or store in a covered jar in the refrigerator for 1 day.
